What does this implement/fix? Explain your changes.

This adds a direct link to the example plot_polynomial_interpolation.py, making it more discoverable. While the example is already linked via an image earlier in the documentation, it may not be intuitive for users to access it that way.

Thank you for the PR, @chloetychang! I have a few comments.

A more advanced use case of polynomial features and pipeline tools, demonstrating
polynomial and spline interpolation with ridge regression, can be found in
:ref:`sphx_glr_auto_examples_linear_model_plot_polynomial_interpolation.py`.

This looks great! To stay consistent with the Linear Model user guide, it might be better to create a subsection called "Examples" and place the example link there. You can refer to how it's done for "Logistic Regression".
