I love boiled egg in salads, but need suggestions for matching dressings?

I'd love to drown this in Ken's honey mustard, but I can't be chugging honey mustard every day.

I made a red wine honey Dijon vinaigrette on this, and it just didn't match.

Nice soft boil there. Well done...flavor. we put boiled eggs in almost all of our salads. Ceasar, oil and vinegar, bleu cheese usually work well.

Great idea, bleu cheese.

Blue cheese all the way or a strong mustard vinaigrette to cut through the fatness off the yolk.

(Then add more fat with some crumbled bacon 🫣)

Yeah I was def wishing I had more vinegar options on hand. Is there a huge use case difference in a white wine vs champagne vinegars?

Champagne is lighter and less acidic. Mellower. Pairs really well with herbs (fresh or dried).

Champange is fantastic..little goes a long way. I'd shoot for some kind of mustard vinegarette using champagne vin, garlic, evoo, lemon, and a yummy mustard. I'm not a mustard connoisseur to recommend one but I'm sure someone will. Yum.

Maybe a homemade Caesar dressing…

3 oil-packed anchovy fillets

1 large garlic clove

¾ tsp. (or more) salt

1 large egg yolk

2 tbsp. fresh lemon juice

¾ tsp. dijon mustard

¼ cup extra virgin olive oil

3 tbsp. parmesan

Blend and refrigerate after use. This will usually make about a cup of dressing. Sometimes I add a bit of water to change its consistency. I’ve also tried adding Greek yogurt and it was pretty good, it changed up the flavor profile a bit.

I’ve been making a tahini Caesar recently and it’s to die for - highly recommend as a switch up.

Oh! That’s a great idea. I’ve brainstorming different ways to change up the recipe, so I appreciate the suggestion. This week I added basil, pine nuts and parsley with aglio olio seasoning from Trader Joe’s.

Thanks so much. Anchovies would be a brand new ingredient for me but I'm up for the challenge.

Use mayo instead of oil and egg.

Mayo is just an emulsion of oil, egg whites and acid. It definitely tastes better when you make the dressing with fresh ingredients as opposed to using store bought mayo, but if you don’t have an egg, oil and lemon juice then store bought mayo would be the route to go.

I use Mayo because I’m neurotic and paranoid about salmonella.

French Dressing or Thousand Island pairs well with eggs in salads IMO ( also dig the honey mustard :))

I like French dressing with my salads that have egg. It’s delicious!

With something like this I usually do a white wine vinegar or lemon base, something acidic with a touch of olive oil a little mustard (dijon) salt pepper maybe some Italian seasoning

Eggs in a salad makes me think of Thousand Island dressing.

For sure, I'm trying to get away from the heavy mayo dressings, but yes that sounds delicious.

Try making some with plain yogurt. It's not bad!

There we go, I always forget about yogurt.

I always worry about using yogurt and then I generally end liking whatever I make with it.

Just a basic vinaigrette 3 T EVOO 2 T vinegar any will work. I like apple cider or white wine vinegar. You can add some Italian spices if you want to make it creamy Italian vinaigrette. And then just add whatever you have on hand a couple tablespoons of Greek yogurt or mayo or sour cream. Salt and pepper and mix. Enjoy

Late to the party but try Kewpie (it’s a sesame seed mayonnaise type sauce) great on all types of salad!

I make a balsamic vinaigrette for mine. EVOO, balsamic, garlic, honey, s&p. Done. Love it on salads with eggs.

Whole Foods sells Cava’s Yogurt Dill dressing. It’s wonderful on everything. Eggs and dill are a great combo.

Traders joes cauliflower ranch.

Homemade yogurt dressings 1) Honey mustard: yogurt, honey, dijon, pepper, garlic, salt. 2) Caesar: yogurt, lemon, Worcestershire, parm, dijon, salt, pepper, garlic. 3) Tahini: yogurt, lemon, tahini, whatever spices you want.

Ken's Light Honey Mustard would be my go to every day. 😅 That, or Ranch.

I love hard boil eggs in my salad and I constantly get cobb salad whenever I am out.

Try Oil of your choice + Ponzu. Little more Ponzu than oil. It’s a citrus vinegar and entirely under appreciated.

I like Thousand Island or Blue Cheese on salads with eggs. They are as calorie heavy as the honey mustard, unfortunately.

Collect the whole set! Ya idk how vinegar forward your Dijon is but a little splash goes well with everything on your plate whenever I have it. Slightly sweet. I also sometimes skip the middle man and just use pickled eggs, but then I add a base like aioli. Maybe just cut your vinegrette with some mayonnaise 🤷🏻‍♂️

Ugh mayo seems the only way out. Eggs love mayo, ya know? I hoped I could just vinaigrette my way out of this, but obviously not.

This is my prompt to make my own mayo. Huzzah!

I know this isn’t what you asked, but have you tried grating the hard boiled egg? I just tried it tonight on my salad and I feel like it takes it to the next level. It mixes in with the dressing and you end up with eggy goodness with each bite. Highly recommend

I'm hesitant about my soft yolks, but if they are cold enough it should be fine right? Are you talking microplane or just straight up cheese grater?

I will admit that I had mine hard boiled with a hard yolk. I used the smaller size on a box cheese grater. I think a microplane might be too fine. I think you should be fine as long as you have them nice and cold.

I haven't seen that here, but Google says it's like French or Catalina, is that right? Sounds good to me, I'll try it.

Western has a bit more of a tang, but French is pretty close, and I don't know if I've had Catalina.

It is so strange that it isn't stocked at stores in my area but is available online. Now I wanna try it, what are they hiding from me? Must be a regional thing?

I'm not quite sure, but when I was a kid at restaurants, I'd order Western and they'd look at me like, 'What?' So then my parents would say, 'French is fine." But I wasn't fine, so that's when I started using French and Ranch, and that's a kinda like it, but it's still not lol

Thousand island has that little sweet you might like.

Bleu for sure, but I HIGHLY suggest using your blender to make a nice carrot/ginger dressing. Then you can marinate the eggs in soy and some other things and make ajitama for a nice Japanese twist! Goes well with some shelled edamame

I'm color dying eggs tonight for Easter and plan on having too many boiled eggs, so thank you, this looks like lunch tomorrow! (they probably won't turn out as nicely soft boiled and might taste like vinegar, but I'll live with it)

Ive recently gotten into making Niçoise salads and the dressing goes super well with the combination of eggs, crunchy blanched green beans, and soft potatoes. Its just a vinaigrette made with evoo, lemon, shallot, dijon, whole grain mustard, salt and pepper.

Please say more, that sounds crazy good. Eggs, green beans, potatoes, what else?

Canned tuna, capers, tomatoes, kalamata olives, and red onion/more shallots too! Its so good!

I have these things. Yuck on the olives but I'm making this for sure.

I do a basic lemon Dijon vinaigrette for salads like this. Lemon juice, olive oil, salt & pepper, Dijon, and a little honey (if you want a bit of sweetness to round it out). Also like some said, this would also be great with Caesar.

Green Goddess, specifically from sweetgreen. Spicy cashew dressing, also from sweetgreen. Balsamic would also be yummy, or maybe a light drizzle of caesar?

I like mustardt vinaigrettes with eggs! Mustard + hard boiled egg is a common snack in eastern euro.

  • shallot

  • garlic

  • Dijon or whole grain mustard

  • olive oil

  • lemon juice

  • sherry vinegar (or red wine)

I use a honey mustard dressing that I make myself - half cup mayo (of your choosing, so you can control fat/calories/weird ingredients, etc), quarter cup honey, 2 tablespoons Grey Poupon. I measure out two tablespoons when I put it on a salad (because it would be too easy to go nuts with it). It's definitely enough flavor when you drizzle it lightly all over.

Thousand Island. But I put that on basically everything, I might have a problem. That looks like an awesome salad well done!
