Hello all! Little context here, I am a volunteer firefighter in the rural Midwest, a department of 60ish members with various food allergies. The chief's wife came up with an idea for all of us who are sick of cooking for ourselves or don't have time to team up and cook as a group. It's a great idea... but now I have to cook a day a week for one of our members who has celiac and I don't know what I'm doing. Obviously, we are trying to keep to a cheap budget and make some good old meat on your bone's food but so far every time I've cooked there has been hidden gluten in it.

So if anyone has good recipes for a crowd that are gluten free or modifiable for a single person (She made a gyro salad on gyro night) please help me! She's a rookie, I want her to feel welcome and I do not want to kill her (Or have to hit her with the epi), but for all of our health and sake, I want this cooking experiment to work.

Hey everyone!

I’m looking into creating an online platform focused on allergen-free and lifestyle diet baked goods (like gluten-free, nut-free, vegan, etc.), and I’m curious about your thoughts. Specifically, I want to know if there are any bakers here who would be interested in connecting with their local communities through such a platform.

The idea is to make it easier for people to find and order these goodies online, with reviews from other gluten-free folks to help guide their choices. I’m also hoping to support local home bakers and small businesses by providing them with a way to reach more customers and get fair compensation for their products. (I've never had any big-box gf food that's as good as freshly made.)

If you’re a baker, would you consider selling your products locally through this kind of platform? And if you’re not a baker, what features or services would you find helpful?

I am undergoing a gluten elimination diet and I was quite surprised to realize that store-bought falafel are not gluten free so I reckon I try it myself, my question though is, do I need BOTH canned chickpeas and chickpea flour or is chickpea flour enough?

In general I was planning to keep it fairly straight forward notably:

  • sweet potatoe

  • chickpea flour

  • garlic

  • squeeze of lemon

  • various spices (salt, pepper, paprika, perhaps some curry powder?)

Is there any essential ingredient I'm missing?

I just want to know if it has to be partially steamed or if it will properly cook no matter how I decide to bake with it. I’m planning on trying to make a recipe that I have been imagining for years but there’s nothing online even remotely similar besides mochi. Any advice greatly appreciated 🫶💯

Hi everyone! My grandma is on a gluten-free and sodium free diet given by her doctor. She can’t eat any seafood, does not eat chicken, and can’t have anything with alcohol or salt. Fruits also have to be boiled before eaten as she can’t eat raw fruits. She does eat red meat (very small amounts), pork, and eggs.

Does anyone have any recommendations on why I can make for her for any 3 meals of the day? She’s staying with me for a couple days and I have to get some groceries to make food she can eat but have no clue where to start! Any help would be great!
