Power to weight ratio... Jets did not take-off... with a massive weight, inertia plays a major role until they reach take-off speed (hence runaways are usually long). The race was basically between the F1 car and the super bike. The top car seems to be a S Plaid (not sure), which would explain the superb start. The super bike takes its time to start as the driver is standing on his foot and needs to balance himself in the beginning while keeping traction under control. But with an insane amount of power, a very low weight and a small frontal area, it picks up speed very fast. The F1, as a racing car (low weight, high power), it is built to be fast (~0.5hp / lb), which is why it gets to the finish line almost side by side with the motorcycle (~1.3 hp / lb).
It's just a race between the F1 car and the bike. The jets aren't airborne utilising their thrust and the gears down causing drag, the weight on the axles alone puts them at a loss. (And I can't understand the altitude oxygen mask for the pilot rolling at sea level). The bike has the better power to weight ratio. F1 cars have a lot of downforce, and they opted to do the race with the drs flap closed.

Top Gear did a similar experiment with a Bugatti Veron vs a Typhoon fighter. They had to dial the power of the Typhoon back 50% in order to give the Bugatti a sporting chance. It was a car show after all!
