Vegan Mac and cheese bake for dinner after a cold run
-tofu based sauce for protein
-lots of spinach for some extra iron
-mushroom and pasta to make me happy
wow that looks INCREDIBLE. i’ve gotta try using tofu to make a sauce like that.
Soup night feat: garlic, onions, ginger, Thai curry paste, not-chicken bullion, coconut milk, lime zest and juice, one potato, a small head of broccoli, an addition onion, red bell pepper, a TON of Thai basil, and rice vermicelli!
This vegan animal style burger required a Level 4 Napkin response.
Part of me felt bad cooking these incredible yellow brandywine heirloom tomatoes and tiny sweet golden cherry tomatoes, because they’re so good raw.
The other part of me happily devoured the resulting tomato-lemon-white-wine-caper sauce with angel hair pasta and fresh sourdough.
Makes 4 burgers:
Mix that all up, form into 4 patties. Pan fry, top with vegan cheese of your choice (this was Daiya American slices), toast buns, top with what you like.
